Sausage and Chicken Pena

This easy recipe, is great for an “I don’t feel like cooking” moment.


1 lb Home Style Sausage
1 lb Sliced Chicken (you can buy pre-cooked)
1 lb Pena Noodles
1/3 cup chopped basil
3 tablespoons of olive oil
1 tablespoon of chopped garlic
1 14.5 ounce can of diced tomatoes
1 16oz bag of shredded mozzarella cheese


Follow instructions on the box to prepare the noodles. While waiting for the water to boil, fry or grill the sausage and cross cut into slices. Chop the chicken, chop the basil and garlic. In a skillet, heat the oil and garlic about 1 minute. Then add basil, and tomatoes (do not drain the tomatoes) and cook for 5 minutes. Add chicken and sausage. Add noodles and toss. Finally add mozzarella cheese and toss. Add a little sea salt and cracked pepper to taste. Serve and eat immediately. You must have something green, salad always works! Turkey Sausage Quiche

This easy recipe can be prepared or cooked in advance. Serves 6 to 8 people.


8 turkey sausage patties
8 eggs
½ cup of milk
4 oz of shredded cheddar cheese
1 green onion stalk (chopped)
1 teaspoon of salt


Using an 8 ½ – 9 inch baking dish. Spray your dish with non-stick cooking oil. Crumble or chop up the 8 turkey patties, and place on bottom of the baking dish. In a mixing bowl, combine eggs, milk, cheese, chopped green onion, and salt. Mix thoroughly, and then pour in baking dish with crumbled turkey sausage patties. Preheat oven to 350, bake for 30 minutes, or until firm.

New Orleans Red Beans and Rice with HomeStyle Hot Smoked Sausage

Serves 6-8 people


½ lb Home Style Hot Smoked Sausage
8 cups hot water
1 sweet bell pepper, any color, med chopped
2 stalks of celery, med chipped
1 Tbs Worcestershire Sauce
2 tsp black pepper
1 lb Camellia red beans
1 med/large yellow onion, med chopped
3-4 cloves of garlic, pressed
2 Tbs dried parsley
2 tsp kosher salt


Cook white rice for 6-8 people. Wash the beans, and soak a minimum of 4 hours, in the hot water.
Drain and rinse the beans. Put them in a large, non-reactive pot with a tight lid, like a French oven.

Cover the beans with 2 inches of water, and slowly bring them up to a boil. Reduce heat to a simmer, and cook for 1 hour with the lid on, stirring and checking the water level often. Add water as needed to keep the beans covered by about an inch of water.

After the beans have simmered for an hour, add the vegetables, plus: Worcestershire Sauce, salt, and pepper. Stir vegetables and spices into the beans and simmer, uncovered, for an hour, stirring and checking the water level Let the juice reduce so that you don’t have a lot of water over the top of the beans – they won’t absorb much more from this point- but they don’t need to be dry, either, or you won’t be able to make the sauce….

When the beans are soft, but before they begin to split and break up, remove one cup of beans and mash them with a fork into a paste. Add the bean paste back to the pot, and mix in well. Then add the Home Style Hot Smoked Sausage, sliced into small pieces.

Make sure the beans are still simmering, and continue cooking them slowly to let the proteins set the sauce and thicken (this may take 15- 20 mins). Adjust seasonings and serve over the white rice. (Recipe contributed by Girls on a Grill, www.girlsonagrill.com)

Home Style Biscuits with Sausage Gravy

Makes about a dozen biscuits.

Eggs: Make your favorite style eggs.



8 Home Style Turkey Sausage Patties (Crumbled)
½ Small onion, diced
Freshly ground black pepper (to taste)
2 Cups milk
2-3 Tablespoons of butter or margarine
1 Tablespoon fresh or dried parsley, chopped fine
2-3 Tablespoons flour
1 Cup fat free half-n-half

Cooking Instructions:

Add 2-3 Tablespoons of butter or margarine and heat your pan. Add the parsley and onion and stir until the onion sweats and becomes clear. Add the flour and mix in well, coating the onion pieces, Add the milk and half-n-half, and stir constantly while bringing the mixture to a boil. It will thicken once it boils. Immediately remove from the heat and add crumbled Home Style Turkey Sausage. Add black pepper to taste.

To serve, split two biscuits open on a plate and top them with the gravy. Garnish with parsley. For a meatier serving microwave a sausage patty and place in on top of the biscuit and then add gravy. (Optional) grapes or sliced peaches and strawberries make a nice addition to the meal.

Chicken Sausage Creole

Serve over white or wild rice with cornbread on the side.


6 Links Chicken Sausage
1 Green Pepper (chopped)
1 – 6 oz Can Tomato Paste
1 Tablespoon Italian Seasoning
2 Tablespoons Worcestershire Sauce
2 Tablespoons chicken bullion
1 Large Onion (chopped)
2 – 14.5 Cans Diced Tomatoes
2 Tablespoons Minced Garlic
2 cups water
1 Tablespoon sugar
1 – 16 oz bag of frozen mixed vegetables that include okra

Cooking Instructions:

Cook Chicken sausage and cut to bite size slices remove from pan and set aside. Use chicken drippings to sauté onions and green peppers. In a large pot combine sausage onions, green peppers on a low flame. Add tomatoes, water, Italian seasoning, chicken bullion, Worcestershire sauce. Turn flame up and bring to a boil. Add vegetables cook for 5 minutes or until veggies are just tender and then reduce flame. Add tomato paste. Stir and taste and add sugar a little at a time to your taste. (Optional chicken parts and or shrimp make a great addition to this dish).

Serve over white or wild rice with cornbread on the side! Let us know how yours turned out!

Home Style Dressing with Smoked Pork Sausage

Serves eleven.


1 lb. package Home Style Pork Sausage
6 tbsp Butter
1 cup chopped Onion
1 cup chopped Celery
2 ½ cups Chicken broth or Water
1 – 16oz package of Dry Herb Seasoned Stuffing
1 tbsp Sage


Sautee’ Home Style Sausage and crumble. Melt butter in a large saucepan. Add onions and celery and cook to 2-3 minutes. Add Broth and bring to boil and remove from heat. Add sausage and dry herb seasoned stuffing and sage. Mix together lightly. Loosely spoon stuffing into the poultry cavity.

* Preparation for baking outside the bird – add 1 tsp. chicken broth per serving and place in a 3 quart casserole dish. Bake uncovered at 350*F for 30 minutes.
